When I’m in the mood for a sweet snack, which is often, I usually turn to a tidbit with frosting — vanilla frosting especially. I have a quick recipe for a simple, no-fail buttercream frosting that I know you’ll love. Adding a little pink color makes this decadent treat topper twice the fun. Enjoy!
Vanilla Buttercream Frosting
Beat 1 cup soft butter, adding 4 ½ cups powdered sugar alternately with 3-4 Tablespoons milk. Add 1 Tablespoon vanilla and 2 drops Wilton food gels, blend well.

The cupcakes are my Almond Cake Recipe. Fill each lined cupcake 2/3rds full with Almond Cake batter. Bake about 30 minutes. Cool cupcakes on a rack before frosting with Vanilla Buttercream Frosting.
