Positively The Absolute Best Chocolate Chip Cookies!
Bake them today for a loved one or take a box of them to a local food bank or crisis center.
2 sticks butter, room temperature
1 teaspoon salt
1 teaspoon vanilla extract ( I used 2 teaspoons)
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
2 large eggs
2 1/4 cup flour
1 teaspoon baking soda
1 teaspoon hot water
2 generous cups walnuts, broken into medium-size pieces
2 generous cups semisweet chocolate chips
Cream the butter. Add salt, vanilla and sugars. Beat well. Add eggs one at a time. Beat in 1/2 the flour. In a small cup stir the hot water into the baking soda to dissolve it. Mix it into the dough. Add rest of flour.
With a big spoon, stir in the walnuts and chocolate chips. Chill the dough overnight or several hours.
Line a baking sheet with aluminum foil or parchment paper. Preheat the oven to 375.
Using a 2 inch scoop, mound the dough on the cookie sheet, two inches apart. Flatten each cookie slightly.
Bake for 12-13 minutes until the edges are crispy.
Cool for a few minutes then transfer to a rack to continue cooling.
